With EVERY edition I feel like I want to get right into my kitchen and cook like it’s Christmas. The stories, the real people behind the produce, the phenomenal recipes - all celebrating honest ingredients and simple home cooking. We all need a little extra pampering this year. This is why I created this pistachio cake for Mothers Day - baked with ground pistachios, lightly infused with rose water, vanilla and almond extract, sandwiched with @kleinjoostenberg's chocolate mousse, and topped with a ganache glaze. It is floral and fragrant and slightly salty and so very delicious. You'll be surprised that the ingredients should work out to around R300 (perhaps less if you have some of the items in your pantry already), and the cake is large so it should yield at least 12 slices. Friends, soup season is pretty much here, and I'm welcoming it with this party-size pot of smoked pork minestrone. Although a classic Italian minestrone is traditionally vegetarian, I've added some prime kassler steaks (diced) and smoked paprika for a deep smoky flavour. Coupled with seasonal veg like kale and butternut, and using my favourite rosmarino/orzo pasta, along with small white cannelini beans, this is a pot of pure hearty joy. Serve hot with generous gratings of parmesan cheese and a drizzle of extra virgin olive oil. Full recipe link in bio. Happy weekend!
